Soothing Lemon Ginger and Honey Hot Drink – AIP Friendly
Do you have the flu and need a pick-me-up, without the added refined sugar or other ingredients you cannot have while following the Autoimmune Protocol (AIP)? Then you have come to the right place. This lemon, ginger and honey hot drink is super easy to prepare. Even if you aren’t sick, this drink has so many benefits.

I actually have no idea what to call it. Ken jokingly used to call it “Ken’s elixir of life” and I call it “that lemon and ginger thingy”. Some people might call it a concentrate, because you only use a small amount. While others call it a lemon and ginger tea. Some might call it a rememdy, because it does really make you feel better. So lets just stick to calling it a honey, lemon and ginger hot drink for now.
We often make a batch ,Be it summer or winter, it is nice to have first thing in the morning, or late at night. There is no best time, but definitely always a good time! Hope you feel better soon!

Simple but Powerful Ingredients: Benefits of Lemon, Ginger & Honey
The ingredients for this are very simple. A fresh lemon, some fresh ginger and some honey. If you can, using organic lemon and ginger, and unpasteurized honey would be the best.
While these seem like simple ingredients, they are super powerful.
Honey – unpasteurized honey has some antiviral, antibacterial and antifungal properties. And if you can get local honey which contains pollen of plants that grow in your area, you may even find it can help with your seasonal hayfever. Lemons are high in Vitamin C, which on its own is very beneficial and has several health benefits. But other than that, lemon also helps the digestive system and can help with weight loss. But don’t overdo the lemon as the acidity can damage your teeth. More info on lemons is here.
Ginger has traditionally been used to support the body fight infections and may help soothe sore throat and nausea. It can also benefit the digestive system and support weight loss, amongst others. But it has so many more medicinal properties and other benefits described here.


How to make your own Lemon, Ginger and Honey Remedy
It’s super quick and easy to make your own mixture. And the best part is once you have made a batch, you have enough to last you a few days.
I like to make it all in a single glass jar, the same jar I will store it in. Less mess, less cleaning! All you need is a jar that has a wide mouth that you can stick your immersion blender in. You don’t want a massive jar, but really only wide enough for the blender to fit in.
Peel your ginger and roughly cut it into smaller pieces. Squeeze out the lemon juice making sure you remove all the pips. Add it all into the jar and add some honey. Now check if you have enough liquid for your blender to blitz it. If you find you need more liquid, add a tiny bit of hot (not boiling) water. The trick is to keep the amount of water to a minimum. Less water means it will last longer in the fridge.
Blitz it all until there are no more chunks of ginger left. And voila, you have your honey, lemon and ginger remedy! To drink it, add two tablespoons to a cup and add hot water. Sit back and enjoy! You will have to stir it up every now and then as the ginger will settle at the bottom.
And if you want it a bit sweeter, you can definitely add a little bit more honey!
In my pre-AIP days we would add a chilli to it. The burn added a nice kick and it was especially good if we were sick. The heat really does help you feel better quickly! We tried adding garlic, but that wasn’t y favorite.
Storing your Lemon, Ginger and Honey Concentrate
This mixture keeps well in the fridge for about a week, maybe a touch longer. The key is to make sure you use a clean jar and clean surfaces when you prepare this mixture. You don’t want to introduce bacteria, as that will shorten the shelf life of the mixture.
Also, every time you use some of the mixture, make sure to use a clean spoon and to seal the jar tightly before placing back in the fridge.
You could even make a bigger batch, portion it into ice cubes and freeze those. Every time you need a quick pick me up, pop an ice cube out the freezer, add some hot water and you are ready to take on the next challenge!

Soothing Lemon Ginger and Honey Drink Recipe
Equipment
- cutting board
- teaspoon or tablespoon
- sharp kitchen knife
- wide mouth glass jar with lid (large enough to use a stick blender in it, but not too wide)
- lemon squeezer (or just press it out by hand)
- immersion blender
Ingredients
- 1 large lemon (or 2 small lemons)
- 2 thumb sized pieces of ginger
- 1 tablespoon honey
- hot water
Instructions
- Wash your lemon and cut it in thick slices. Squeeze all the juice into a wide mouth glass jar. Make sure to remove all lemon pips.
- Peel the ginger and slice it into 1/4 inch sized pieces. Add it to the jar of lemon juice.
- Add 1 tablespoon of honey to the jar.
- If you don't have enough liquid in the jar to blitz it, add a little bit of hot water. Just enough so you can blend everything. Less water is better.
- Blend everything until the ginger is shredded into tiny pieces.
- Add 2 tablespoons of the mixture into a cup and add hot water. Sip and Enjoy! Stir while drinking as the pieces will settle in the bottom.
