This simple cauliflower rice recipe has become our go to side for breakfasts, lunches and dinners.
Adding some fresh lime and cilantro to it really brightens up the dish and complements asian inspired dishes so well!

Following strict the Autoimmune Protocol elimination diet can be hard, and finding side dishes that aren’t always the same, and that aren’t always sweet potato or butternut based can be a challenge. But cauliflower rice is such a versatile side dish. I don’t know why I did not look into it sooner!

Why Cauliflower Rice Works Well on AIP for Hashimoto’s

Cauliflower rice is often well tolerated during the AIP elimination phase because it:

Why Cauliflower Rice Is a Great AIP Side Dish

It is so easy to prepare and so quick to cook. And if you don’t want to grate your own fresh cauliflower you can even buy readily riced cauliflower (fresh or frozen depending on where you are). 

Added bonus, once you have the basics of cauliflower rice down, it is super easy to adapt it. Add different herbs and spices, and you can mix it up and adjust it to match the flavor profile of your protein. For example, turmeric cauliflower rice goes really well with curry breakfast sausage.

Simple Ingredients for this Cauliflower Recipe

  • Cauliflower – because what is cauliflower rice without the star ingredient!
  • Salt – because it needs some seasoning
  • Oil for fying, we like to use avocado oil or olive oil
  • Lime juice and fresh cilantro to add some brightness to the dish

How to Make Basic Cauliflower Rice (Fresh or Frozen)

We like to use fresh, whole cauliflower heads for our AIP cauliflower rice recipes.

We usa a food processor that has a grating plate to rice the cauliflower (including the stem). A blender will also do the trick. Or you can grate the cauliflower by hand if you don’t have a food processor. You want to aim for rice sized pieces or slightly larger. Don’t make it too fine, because then it isn’t cauliflower rice anymore.

Chop up the cilantro and set aside.

Preheat a frying pan or skillet on medium to high heat. Add a little bit of olive or avocado oil and add the cauliflower rice and salt.

Heat the cauliflower and stir occasionally, until heated through (approximately 8 minutes). Add the cilantro and lime juice and stir in for another 2 minutes. Remove from heat and serve.

Tips for Making the Best AIP Cauliflower Rice (Whole30, Paleo, Vegan)

This recipe uses fresh cauliflower that is grated or by hand or in a food processor. However you can make cauliflower rice using prepackaged or frozen cauliflower rice. Depending on the water content of these, you may want to squeeze out as much moisture as possible before cooking to make sure you don’t end up with cauliflower mash.

Don’t overcook the cauliflower rice. It really only needs to be heated through. You want to keep some of the crunch and texture. Otherwise we would call it cauliflower mash…lol.

This recipe goes really well with asian flavors, such as this asian pork stirfry or the Asian-inspired ground pork or Asian flavored breakfast sausage. And you can easily adapt this AIP cauliflower rice recipe to match other dishes. Add some spices, or different herbs. Equipment

  • food processor, blender or grater
  • large frying pan or skillet

Ingredients
  

  • 1 teaspoon avocado or olive oil for frying
  • ½ head cauliflower
  • ½ teaspoon salt
  • ¾ cup cilantro
  • ½ juice of lime

Instructions
 

  • Preheat your frying pan or skillet on medium-high heat. Coat the pan with avocado or olive oil.
  • Trim the end of the cauliflower head and remove any bad spots and the outer leaves.
  • Cut the cauliflower into smaller, more manageable pieces. Grate the cauliflower into rice sized pieces using either a food processor or blender, or grating by hand.
  • Chop the cilantro into small pieces.
  • Add the cauliflower rice and salt to the pan, and stir for about 8 minutes or until the cauliflower is heated through.
  • Add the cilantro and the juice of half a lime and stir it into the cauliflower rice for another 2 minutes.
  • Remove from heat, serve and enjoy!

FAQ: Cauliflower Rice on AIP

If you are using a fresh, whole cauliflower head it should not be soggy. If you rinse it, let it drip dry or shake the excess water off before grating the cauliflower. If you are using frozen cauliflower, squeeze out excess moisture  before cooking.

Also, cook it in a wide pan over medium‑high heat, without covering it, so excess steam can evaporate quickly.

Yes! Frozen cauliflower rice works great. There’s no need to thaw it, instead you can just add it straight to the pan. Or if you defrost it first, squeeze out any excess moisture. In a large pan, cook it for a few extra minutes to let the moisture evaporate. Don’t use a lid, so that liquid can evaporate.

Cauliflower rice keeps well in an airtight container in the fridge for 3 to 4 days. You can also freeze it (raw or cooked) for up to 2 months.

Cauliflower is generally allowed during the AIP elimination phase. While cruciferous vegetables are sometimes discussed in thyroid health conversations, cooking cauliflower reduces compounds that may interfere with thyroid function. Most people tolerate it well when cooked.
