AIP Cauliflower Rice with Cilantro and Lime

This cauliflower rice recipe is AIP and Paleo compliant. It is gluten-free, coconut-free, and perfect for Hashimoto’s and Celiac. An easy, versatile grain-free side dish.

Equipment

  • food processor, blender or grater
  • large frying pan or skillet

Ingredients
  

  • 1 teaspoon avocado or olive oil for frying
  • ½ head cauliflower
  • ½ teaspoon salt
  • ¾ cup cilantro
  • ½ juice of lime

Instructions
 

  • Preheat your frying pan or skillet on medium-high heat. Coat the pan with avocado or olive oil.
  • Trim the end of the cauliflower head and remove any bad spots and the outer leaves.
  • Cut the cauliflower into smaller, more manageable pieces. Grate the cauliflower into rice sized pieces using either a food processor or blender, or grating by hand.
  • Chop the cilantro into small pieces.
  • Add the cauliflower rice and salt to the pan, and stir for about 8 minutes or until the cauliflower is heated through.
  • Add the cilantro and the juice of half a lime and stir it into the cauliflower rice for another 2 minutes.
  • Remove from heat, serve and enjoy!
