AIP Cauliflower Rice with Cilantro and Lime

- 1 teaspoon avocado or olive oil for frying
- ½ head cauliflower
- ½ teaspoon salt
- ¾ cup cilantro
- ½ juice of lime
Preheat your frying pan or skillet on medium-high heat. Coat the pan with avocado or olive oil.
Trim the end of the cauliflower head and remove any bad spots and the outer leaves.
Cut the cauliflower into smaller, more manageable pieces. Grate the cauliflower into rice sized pieces using either a food processor or blender, or grating by hand.
Chop the cilantro into small pieces.
Add the cauliflower rice and salt to the pan, and stir for about 8 minutes or until the cauliflower is heated through.
Add the cilantro and the juice of half a lime and stir it into the cauliflower rice for another 2 minutes.
Remove from heat, serve and enjoy!
