Quick and Easy Beetroot Latte (AIP, GF, paleo, vegan)

Nothing beats a warm, comforting drink! Be it a coffee in the morning or a good cup of tea when you put your feet up for a few minutes! For me a delicious beetroot latte is the ultimate treat. Plus, who doesn’t love pink drinks!

Before I went on the AIP diet, a café latte was a special treat. But in my mind, a café latte is not the same with dairy alternatives. The flavor is just not the same. 

And seeing that milk doesn’t seem to sit too well with me, I try to reduce it as much as I can. And then of course there is the AIP protocol, where neither coffee nor milk is allowed. 

So we created a few ‘latte’ alternatives to take the place! Our new favorites are a chai latte in the morning, a turmeric latte after a hard day when the body hurts. And the ultimate, the beetroot latte, the perfect treat for any occasion! These are great coffee alternatives when on the AIP diet.

Comfort with benefits

Beets are considered a superfood. Packed with nutritional and health benefits they provide a healthy and nutritious addition to your diet.

Note:

Something to keep in mind though is that beetroot can lower blood pressure. So if you have low blood pressure or take blood pressure medication, you might want to consult your doctor before making beetroot latte’s a daily treat.

Simplicity is king

I prefer a simple beetroot latte recipe. With minimal ingredients, that is quick to whip up and enjoy. 

So we have decided to keep it simple, with only 2 ingredients and our favorite milk, homemade coconut milk. It is AIP-friendly and super easy to make. Plus it adds a nice delicate flavor to the latte, elevating it to the next level.

Ingredients and Notes

Beetroot powder: I found mine on Amazon, but you might be able to find it at your local health store. A little bag goes a long way.

Cinnamon powder: Cinnamon powder should be readily available from your supermarket. This adds a bit of depth flavor to the drink

Milk of choice: When I was trying to reintroduce milk I tried it with normal milk, and I must say, I really do prefer it with homemade coconut milk. But I have not tried it with other milks yet.

You don’t need anything other than a means to boil water or warm your milk to make this simple recipe. You can get fancy and froth your milk with a milk frother, but not all milks lend themselves to being frothed.

Sweeten the deal with natural sweeteners

I prefer my beetroot latte mix without added sweeteners. But if you like to add a little bit of sweetness, explore adding some honey or maple syrup. 

I would suggest starting off with only a few drops. The latte has a very delicate flavor, and too much sweetener might overshadow the natural beet flavors.

For me, this is the perfect drink for after dinner, when you feel like you want something to fill the gap. When you feel you need something comforting, or perhaps even something on the sweeter side. I hope you enjoy this latte as much as we do.

Beetroot Latte Recipe

Nothing beats a warm, comforting drink! For me a delicious beetroot latte is the ultimate treat. Plus, who doesn’t love pink drinks!

Course Drinks
Servings 1 cup

Ingredients
  

  • 1/4 teaspoon of Beetroot Powder
  • a small sprinkle of Cinnamon Powder
  • Hot water and/or Milk of choice: if you want it creamier add more milk and less water
  • Optional: natural sweetener such as honey or maple syrup

Instructions
 

  • Measure out the powders and add to a cup
  • Boil water or warm your milk
  • Mix all together
  • Sip and Enjoy

Notes

We prefer mostly hot water with some milk. But some days we have mostly milk and less water. It really depends on the day. Play around and see what you prefer.
If you find the flavors are not strong enough, add a little bit more beetroot powder.
Notes: If you decide to use only milk, and no water, slowly warm the milk in a saucepan making sure not to overheat it or let it boil

  • You sure can. This is a different process and involves a bit more time and preparation. I have not tried it yet, but it is on my list of things to play around with, so let me know if you have tried it and what your favorite recipe is.
