Microwave Spaghetti Squash

Spaghetti squash are the ultimate spaghetti replacement. This healthy squash is quick to prepare and makes an excellent pasta replacement!

Ingredients
  

  • 1 spaghetti squash

Instructions
 

  • Cut in half
    Carefully cut the squash in half, or however much you want to prepare. You can cut it either lengthwise or cross wise. The spaghetti squash strands run around the center, not from end to end. So if you want longer spaghetti squash strands, cut the squash around the waist (thickest part of the squash).
  • Remove seeds
    Scoop out the seeds using a tablespoon.
  • Microwave
    Place the halves cut-side down in a microwave-safe dish. Microwave on high for about 10 minutes depending on the size of the squash. There is no need to add water. The skin of the spaghetti squash acts like a lid, locking in moisture and allowing the spaghetti squash to steam itself.
  • Check for doneness
    Remove the spaghetti squash from the microwave and flip it over. Be careful as the hot steam can burn you. With a fork, check whether the spaghetti squash is done. It should be soft all the way to the skin and strands should easily scrape off. If it is still firm, microwave for an additional 1-2 minutes, or until it is done.
  • Let it Rest and then scrape
    Let it cool slightly to make it easier to handle, and then use a fork to scrape out the strands.

Notes

Things to note:
Microwaves vary in wattage/power. You will need to play around with the timing on your microwave. Start with less and work your way up until you figure out what works for you.
